Although Japanese in origin, sencha tea is a very popular and frequently consumed drink in China where it is more economically produced and is of a comparable standard. The large-leaf is slightly brittle due to its wiry character, while the dark olive green infusion clearly shows that the middle leaf shoots which contain less caffeine, have been processed. The cup shimmers with a strong green-yellow tone. Extremely soft and mild with a sweet note. Ideal for green tea beginners. Drink from the afternoon onwards.

BREWING GUIDE
From Leaf to Cup in 4 Steps
Add loose leaf
Place 1–2 tsp of tea in the glass infuser basket.
Pour hot water
Fill the teapot with water just off the boil (80–95°C).
Steep & watch
Steep for 2–5 minutes and watch the tea unfurl
Remove & enjoy
Lift out the infuser to stop brewing. Pour and savour.
